Much like the Istrian sausage, the Istrian salami known as “Kosnica” is another premium Istrian culinary product. It used to be served to many a reaper during harvest, hence the name “kosnica” (“kositi”=”to reap”). It is made in the same way as the sausage, with the distinction of being stuffed in a larger casing, which extends the ageing to a period of 60-90 days. It is a premium product that can be served at every occasion.
