Istrian pork neck or “Buđola”, as it is known in Istria, is another premium delicacy that takes a little longer to dry due to the consistency of the meat and fat. It is cured with sea salt, seasoned and placed in a net, where it ages for 4 – 6 months, depending on the size. It has a distinctive flavour and aroma, which is typical of Istrian delicacies.
